Smoked Rosemary Old Fashioned

A drink that engages the nose as much as the palate — the herbal smoke hits before the first sip does.

Ingredients
  

  • 2 oz bourbon
  • ¼ oz honey syrup 1:1 honey and warm water, stirred to dissolve
  • 2 dashes Angostura bitters
  • 1 fresh rosemary sprig
  • wood chips or a smoking gun for the smoke effect (optional but worth it)

Instructions
 

  • Stir bourbon, honey syrup, and bitters with ice, strain over a large cube, and top with the rosemary.

Notes

If using a smoking gun, char the rosemary sprig lightly and capture the smoke under a cloche or inverted glass over the finished drink for about 30 seconds before serving. If you don't have smoking equipment, gently torch the rosemary sprig for a few seconds to release its oils, then use it as the garnish — you'll still get a nice aromatic lift.
